Nice, I have an 8GB, but I've been meaning to fetch one with more memory.
Anyways, the problem should be that when you plug in your iTouch, iTunes will switch to a screen that shows your type of iPod, the memory, and how much pics/songs/movies/etc. you have on it.

On this page, at the top, there should be some tabs for managing songs and whatnot. Make sure your iTunes settings are correct, because in the movies or TV shows tab, there should be some options that you can tick off so you can manually manage your TV shows that sync onto your iTouch.

I'm not very sure how to explain all that, but browse through it and make sure the right options are ticked off, and the right TV shows are selected.

Also check to see if your iTunes is set to "Manage songs/shows/movies manually"
or
"Sync all items to this iPod, etc..."

If that doesn't work, then take it to an Apple Store, or contact Support through their homepage on the internet or on the iTunes store.
(In fact, that's easier to do than ask here ;) they reply faster and more efficiently)
