if you delete it then its gone off your itunes. but you should go to settings when you plug in you ipod and at the bottom theirs boxes options you check, so check the box that says something about only adding checked music then go to your music and uncheck whatever you dont want on there, that way you dont have it on your ipod but its still on you itunes.
