Different colleges will likely have different requirements for application submisions. Make a checklist for each application and keep everything in separate piles/folders/whatever.

Absolutely use the envelopes they provide you. If you use your own you might write the wrong address. Also, take the applications to the post office and have them weigh it and buy the postage then. You don't want to have your application returned to you because you didn't put enough postage on it! When I applied to colleges I also spent the extra money to have delivery confirmation...that way I had proof that it arrieved on-time.

That's really great that you're starting to think about colleges already. Instead of worrying which college is best (and there's no real way of saying which is or isn't), concentrate on your schoolwork. You'll need very good grades to get into any of those schools and a lot can happen between now and your senior year of high school. Your sophomore or junior year you should consider visiting some of those schools if you can (some schools offer online tours of their campus). Talk to your parents now about how your education will be paid for and also consider scholarship opportunities.
