So, i got a new cat and he has a habit of jumping up on the counters when no one's looking. he know's he's not supposed to be up there because as soon as someone walks into the kitchen he jumps down and runs away. how can i discourage, or even put a stop to this behavior? and advice helps!

Well, you can try a scat mat. It's like a regular mat that is either battery operated or you just plug in, and when the cat goes to jump on the counter, the scat mat gives of a small shock. It sounds cruel, but it's a small shock and it doesn't give them any pain.
You can also try like the other advicenators said a spray bottle. An empty, clean hairspray bottle will do fine and all you have to do is put some water in it, so whenever your cat goes onto the counter, give him/her a little spritz.
Another method you can use is acid. Cats hate the smell of acid. For instance, if you take a lemon or orange and squeeze the juice out of it and dab the juice on your counters, your cat will surely hate the smell and refrain from jumping on the counters.
Typical pet stores generally sell sprays for cats and dogs to prevent instances such as yours, so you can try any of the methods above. I haven't used the acid method, I read that in a cat calendar lol, but you can always try. I have used the scat mat and water bottle before though. I'll just tell you that the water bottle works like a charm.
