how old do you have to be to work at a horse stable usually. i know it probably differs depending on the stable. (link)

It depends on what you're looking to do at the stable.
I know I started doing barn chores such as mucking stalls, feeding, and grooming when I was 10.
I started teaching lessons and training when I was 17.
I think experience plays a huge factor when it comes to being hired to work at a stable. If you can prove to them that you know what you're doing, there are stables out there that would probably be willing to give you a chance. Some stables are willing to take people with no experience, but be prepared to be doing the mucking out and cleaning types of chores.
