Say you're working. Some guy walks in, and he's a nice, respectable young man who, after moderate conversation, turns out to be kind of interesting.

Okay, I'll just cut to the chase. I'm basically asking how you would respond to a guy asking for your number while you were at work (one who doesn't work with you). What 'parameters' would lead to a positive outcome, if any?

I had the same problem! I did take the chance once in a while but not all the time i always find out if they would be any fun first. so i would suggest that you always make deep conversation to see if you could be compatible. hope i helped!
