say someone got drunk at ten one night and didnt drink anything else after, what time would they be sober at? and like does going to sleep make a difference in how long it takes? and does how much you drink affect it (link)

Really, time is the most effective way of 'sobering up'. Generally the rule is about two hours for every serving of alcohol to be out of your system, but there are a lot of variables, like age, weight, things like that. My suggestion: don't get drunk.
